The Ask: As Paso Robles wine country gained popularity in central California, the towns’ restaurants started to all look and feel, the same. Owners Maggie and Eric wanted a cozy, locals joint fueled by wood-fired rotisserie and small batch whiskey.
Insight & Approach: With rotisserie chicken being the shining star and learning the cocktail’s ingredients would be harvested on the owner’s farm, a chicken / weathervane identity pointed us in the right direction. The interior space strikes a balance between rustic and polished, where Paso Robles character subtly winks and welcomes you. Warm wood notes, industrial metal-piping, upcycled decanters, salvaged railroad ties and warm lighting help tell this story of rustic charm.
